We chose this registry as we both have a interest in wine and liked the thought of sharing these wines with you into the future. We regognised that many of our fondest moments with you all are usually spent over a meal and a bottle of wine. We look forward to continuing this by sharing this wounderful gift with you all with the added benifit of remembering our wedding day whilst doing so.

Tasting Notes:
The 2010 vintage at Hilltops was marked by a warm, dry growing season. The long drought reduced yields and concentrated flavours. There is an intense black-red colour to this wine. The aroma shows ripe, black fruit in various guises: blackcurrant, blackberry and blackstrap liquorice! Great now if you love a powerful red, but leave some in the cellar for five to ten years to taste its full potential.

Tasting Notes:
In 2007 drought and frost combined to reduce yields to only 20% of our normal crop. Barrel fermented entirely in French oak using natural yeasts, the 2007 Viognier is a full bodied white with potent honeysuckle, pear, ginger and apricot aromas. It shows the classic silky Viognier texture while retaining a tight structure and refreshing acidity.

Tasting Notes:
The primary fruit characters mingle perfectly with smoky French oak flavours. Long and rich cherry fruit is balanced with secondary flavours of plum, spice, beetroot and forest undergrowth. The palate has remarkable mid-palate generosity; is supple and textured with well integrated tannins and a long expressive aftertaste.

Tasting Notes:
2008, whilst very wet, has produced some terrific white wines from the Hunter Valley. Chardonnay fared very well along with Semillon and Verdelho. The 13% alcohol is no real indication to the flavour level. It has fruit characters of white peach and nectarine on the nose and palate with a great line of acidity serving as a structural backbone. The French oak has added some complexity in the absence of malo, with the wine showing lovely spice nuances. Cellaring: Medium term. 5—8

Malbec has been a favorite variety of David’s for a long time, its floral nose and soft spicy flavours make it a perfect blending friend of Shiraz, and the resulting wine pliable to most dishes with or without meat. The shiraz is matured in one to four year old French and American hogsheads, the Malbec in one to four year old American hogsheads, both for 15 to 18 months. Closed under screw cap. No filtration. This wine is made with fruit grown at our vineyard at Lake George. It is 100% barrel fermented in French oak barriques (25% new), with lees stirring every 2 weeks. It is a light straw colour with aromas of peach, melon, mandarin and vanilla, with nutty/toasty overtones. A smooth, rich palate with a long crisp but soft oak finish. Serve lightly chilled. This wine will complement mild cheeses, seafood and white meat dishes. Very drinkable now, it will benefit from ageing for 3-5 years.

This wine is made from fruit (94% Shiraz, 6% Viognier) grown on our vineyard at Lake George. The grapes were hand picked on the 19th April 2006, cold soaked for 4 days, fermented to 30C, hand plunged 3 times a day, left on skins a further week before pressing, and matured in French Oak Barriques for 12 months. The wine has an intense nose of plum, spice, apricot, cedar and vanilla aromas and a rich and savoury palate with a long fine grain tannin finish. This wine will go with rich red meat dish
